Why you should soak rice before cooking

Soaking rice also helps in removing phytic acid, a substance found in plant seeds that impairs the body’s absorption of iron, zinc, and calcium. A study says that it is found in higher quantities in seeds, grains, legumes, and nuts. It is basically the storage unit of phosphorus in seeds and it stops the absorption of minerals and soaking rice in water, helps remove the phytic acid.
